Graham Crackers

The other day C was readingĀ The Doorbell Rang (Pat Hutchins) and said he wanted to make “kingkongs” (which is how he says “cookie”). And I have been wanting to make these graham crackers for a while…

So I mixed them up during naptime and had them rolled out when C awoke. He sprinkled them with cinnamon sugar.

They are good, but I’m not totally satisfied. I think next time maybe a bit more butter, or maybe white flour instead of the oat. Or maybe I just need to roll them thinner? I found that difficult because the dough is very crumbly. But now that I’m thinking of it, I remember I forgot to measure the oat flour after grinding it in the food processor, so maybe I just had too much flour.
